SOFIA is an innovative, multifunctional, fun-to-use with a professional outcome pasta machine. Suitable for restaurants, pasta shops, hotels and in-home use. Sofia is for those who love to experiment with the Italian cuisine. It produces very high quality pasta, according to La Parmigiana’s tradition.
The kitchen kit allows for the production of dough for bread, pizza and desserts as well as sauces, creams and fillings.
Sofia is equipped with a safety system, thanks to the latest generation card, automatically reversing the rotation for 15 seconds and stopping the machine in case of inconsistent dough. This “smart system” makes it possible to safeguard the machine.
FLOUR INCLUDING GLUTEN FREE:
Press with centrifugal mixing tank that allows homogeneous and faster mixing and the static hydration of the dough, decreasing the oxidation of the dough and thus preserving the original color. This patented and exclusive system allows for the extrusion of all types of flour and mixtures. Perfect for gluten-free flour.
DIES AND PASTA SHAPES:
By changing the die, Sofia can make many different shapes of pasta of different sizes and with a special die it is also possible to produce a pasta sheet for lasagna.
